Glyceryl Monostearate, also known as GMS, is an ester of glycerol and stearic acid. Its molecular formula is C21H42O4. At room temperature, it appears as a white or cream - colored waxy solid. It is a W/O emulsifier with an HLB value around 3.8. Glyceryl Monostearate is soluble in hot oils and fats but has limited solubility in water. It is widely used in food, pharmaceutical and cosmetic industries.
